I'm really enjoying the fact that, with the fact that I really can't eat out in the equation, I'm forced to make healthy, nutritious meals for myself.

Today, it was chicken stir fry.

one small package of chicken
one green pepper
one onion
1/2 can of pineapple (in juice)
1 can water chestnuts
some frozen broccoli/carrots
2 tsp peanut oil (enough to season the pan -- I don't do teflon if I can help it -- I strongly prefer my old-new visions frypan and a wooden spatula) 1 tsp sesame oil (this is more for flavor) 1/2 tsp red pepper infused rapeseed oil light sprinking sesame seeds
some peanuts (a small handfull) some cashews (a small handfull)

Fry, stirring constantly. Serve over rice (I used "instant" Jasmine rice). I fried too long because I was waiting for the rice to cook (I forgot to turn the burner on) -- it could have been crisper, but hey, live and learn.

I should get a wok.
